Nachos are a snacking staple! Lighten up this popular treat by swapping tortilla chips with courgette, and processed dip with light, shredded cheese. Add fresh ingredients, plus protein, and voila, you have a healthy meal. Check out the easy recipe below, one bite and you’ll be telling everyone that courgette is the new tortilla chip!
For 8 servings, you’ll need:
4 medium sized courgettes, washed and sliced into rounds
240 g of cheese
1/2 coriander bunch, chopped
3 green onions, chopped
3 roma tomatoes, diced
1 400 g can of black beans, drained and rinsed
2 avocados, diced
60 ml olive oil
Salt and pepper, to taste
Place courgette rounds on an oiled baking sheet, add salt and pepper, and bake at 180 degrees Celsius for 8 minutes. At the 8 minute mark, sprinkle about 60 g of cheese and broil for 2 more minutes. After that, add to a platter, and top with the remaining ingredients. Enjoy immediately.
