Healthy Dinner Recipe: Salmon, chicken or king prawn noodles

Here’s a quick, easy and delicious noodle recipe to try!

Cooking time: 10 minutes
Preparation time: 5 minutes
Serves 2 people

What you need:

  • 2 salmon steaks / 2 chicken breasts / 400g King prawns
  • 20g fresh coriander
  • 4 stalks spring onions
  • 1 inch of fresh ginger
  • 1 fresh chilli
  • 1 garlic clove
  • 50g chopped sugar snaps / green beans
  • 150g Egg noodles (change for couscous, quinoa, brown rice or buckwheat and follow cooking instructions on back)
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce (light)
  • 1 handful of bean sprouts

What to do: 

  1. Chop the ginger, garlic and ginger and fry in some coconut or ground nut oil
  2. Add the meat / fish
  3. After 5 minutes add the sugar snaps
  4. Add the egg noodles to a pot of boiling water and cook according to the instructions on the pack
  5. Drain the noodles and add the sesame oil and chopped spring onions
  6. When the meat / fish has cooked, add the soy sauce and turn off the heat
  7. Mix in the noodles
  8. Serve with the chopped fresh coriander and bean sprouts on the top
